Loop Sunday Lunch

Try this delicious Lemon and Garlic Beef recipe, courtesy My Life Cookbook:

Lemon & Garlic Beef


2 lbs beef cut into cubes (I used stew meat)

4 cloves garlic, crushed

1 lemon, zest and juice

1/2 teaspoon salt

1/2 teaspoon pepper

1/4 cup parsley, minced


Preheat oven to 300 degrees F.

Spray a large piece of foil and set aside.

Toss beef cubes, garlic, salt, pepper, lemon zest and the juice of half a lemon.

Add to the foil and fold into a packet.

Place on the middle rack of the oven and cook for 3 hours.

Take out of the oven and squeeze remaining half of lemon and sprinkle parsley on top.

Serve immediately.
